Паста а ля Итальяно

Здравствуйте! Сейчас я вам расскажу, как приготовить Паста а ля Итальяно. Несмотря на созвучие, паста это не паста в нашем российском представлении, а скажем так, это макаронное изделие. А как всем известно макароны родом из Италии. Вот о них то и речь.

Для приготовления 4 порций пасты:

1. Яйца куринные 5 шт.;

2. Мука пшеничная высший сорт 2,5 стакана;

3. Соль;

4. Масло оливковое 1 чайная ложка.


      Разбить яйца в предварительно просеянную муку, положить соль по вкусу. Тщательно перемешать до получения однородного теста без комков. Тесто не должно прилипать к рукам и разделочной доске. Ближе к концу приготовления теста руки смазать маслом.

      Приготовленное тесто завернуть в пищевую п/этиленовую пленку и положить в морозилку на 25-30 минут. Замораживать тесто не надо. Приготовленное тесто нужно использовать все. В тесте много яиц при хранении оно испортится.

      Нужно раскатать тесто с помощью итальянской ручной машинки. Сначала раскатывается нужной толщины полоса. Потом полоса распускается на пасту, желаемой ширины.

      Нужна, чтобы в широкой кастрюле кипела подсоленая вода. Пасту сразу же из машинки опускать в кипящую воду. Как только начнет закипать немедленно доставать пасту из воды иначе получится резина. Горячее сырым не бывает.

       Отваренную пасту перемешать с соусом, посыпать тертым пармизаном, сбрызнуть оливковым маслом.




Самый простой томатный соус:

1. Спелые помидоры 1кг;

2. Перец сладкий 4 шт.;

3. Чеснок 8-9 зубчиков;

4. Лук шалот 6-7 головок;

5. Перец чили среднежгучий 2 стручка;

6. Сахар 1 чайная ложка;

7. Соль по вкусу.


      Помидоры бланшировать, очистить от кожи. 70% помидор протереть через друшлак (сито), оставшиеся порезать кубиком. Порезать мелко чеснок, лук, перец чили. Порезать кубиком перец сладкий. На разогретой сковороде обжарить лук до прозрачного, добавить перец чили, через минуту добавить чеснок и когда появится запах чеснока, снять сковороду с огня. В воке желательно с керамическим покрытием потушить протертые помидоры, добавить соль и сахар сладкий перец и на небольшом огне потушить 3-4 минуты, добавить обжаренные лук с чесноком и перцем чили. Добавить оставшиеся, порезанные кубиком помидоры. Довести до кипения и снять с огня. Соус готов. Перед окончанием можно добавить специи: измельченные семена фенхеля, кориандра, сушеный чеснок, немного свежевыжатого лимонного сока.
